Sunday Morning Special: Summer Produce Edition

As you might have been able to tell from my last two recipes, I’m on a bit of a produce kick. When it’s so fresh and flavorful (not to mention right in my backyard each Saturday), how could I not?

So today, I rounded up 6 dishes to add to a summer fruit and vegetable recipe bucket list. I must try these before the ingredients go out of season! Join me?

  • Just genius. Serve your favorite berries in an ice cream cone for an edible serving dish! Lindsay at The Cottage Home makes it look easy and elegant enough for entertaining! Just like with ice cream, a little whipped cream on top wouldn’t be a bad thing…
  • Speaking of elegant, this Stacked Summer Vegetable Salad from Better Homes and Gardens is quite the showstopper. It sounds surprisingly easy to make, as long as you have a mandoline (just don’t forget the finger guard!).
  • Not much screams “summer!” more than grilling. But why save it for corn and kebabs? Alex from Delicious Knowledge created a Grilled Summer Fruit Salad recipe that could include any of your favorite farmers market finds.
  • While the grill is out, The Spicy R.D. has a meal to cover your vegetable needs. Slice up some tomatoes, zucchini and peppers, add a few mushroom caps and slabs of polenta and pile on a plate.
  • Eat Spin Run Repeat’s fresh summer salad mixes fruits and veggies, plus beans for some protein, all in one dish. I’m loving all of the colors in her Mango and Edamame Salad with Lime Vinaigrette!
  • For dessert, how about an adorable watermelon “cake”? Jess at Don’t Mind the Mess shows how melon, berries and whipped cream (I bet you could swap in Greek yogurt, too!) can transform into a festive single-serving treat.

  2. I love the idea of serving berries in waffle cones! How cute! We just picked up a bunch of fresh greens and strawberries from the market today. I’m looking forward to some tasty salads this week. :-)

    • It sure sounds like you have some tasty meals ahead, Deb! I used to prefer to keep my fruits and veggies separate, but now I’m loving berry-topped salads. So fresh and yummy! :)
