Meatless Monday Dinner: Pizza Polenta Parfait

DSC_0004

Have you ever eaten polenta? Prior to this kitchen experiment, I'd only had it as a side while eating out. Polenta is just cornmeal cooked into a paste with water or stock, which can be eaten as-is or baked, fried or grilled. You can find it in grocery stores in tubes or make your own from boxed cornmeal. It's a versatile side since it can take on the flavor of whatever you prepare it with. It's surprisingly light, too! ...continue reading

Light Fried Rice

Rice

When you grow up in a town of 35,000, you don't come to expect the greatest global cuisine. Case in point: For as many years as I can remember, the local grocery store, Hy-Vee, was voted as the place with the best Chinese food during the newspaper's yearly "best of" poll. It's hard to beat the price—you can get two entrees that come with a huge mound of fried rice, an egg roll and a fortune cookie for less than $6. But the ...continue reading

Low-Calorie Burrito Bowl

By now, it's a pretty well-known fact that the monster rice and bean-stuffed burritos, popular at Mexican fast food restaurants, are no diet gem. The tortilla alone often clocks in around 300 calories and 10 grams of fat! So you'd be getting a light option by foregoing the wrap and ordering a burrito bowl, right? Not so fast. A fully-loaded vegetarian bowl at Chipotle, while very tasty, packs in 760 calories, 39 grams of fat ...continue reading

Mini Cauliflower Pizzas

Cauliflower

Happy birthday, Mom and Dad! My parents were born (one year and) four days apart, so I spent this weekend celebrating with them before Mom's day tomorrow and Dad's on Friday. We had an awesome time seeing the movie Rush (+1 to Ron Howard and co. for casting Chris Hemsworth), and playing golf. And as an added birthday bonus, I developed a new "cupcake" recipe! As you might be able to guess from the photos so far, these aren't ...continue reading

Better Than Bagel Bites: Mini Pita Pizzas

DSC_0042

My go-to elementary school eats may have been as colorful as the ingredients above, but those colors certainly weren't natural. The "cool" after-school snacks came out of a box. Pop Tarts, Better Cheddars (anyone else remember those?!), Fruit Roll-Ups, you name it. Or what about Bagel Bites...those perennially popular mini pizzas that are marketed as "wholesome," healthy choice, yet somehow contain high fructose corn syrup and 15% ...continue reading

Pizza Quinoa Pasta Salad

Q2

This next Pizza Month recipe starts in a similar way to my Superfood Pizza, but the end result is a completely different—and completely delicious—treat. Rather than a crust, today's "pizza" gets a healthy dose of whole grains from quinoa. While I've cooked with this a couple times here on Healthful Bites before (see my Southwestern Stuffed Peppers and Honey Wheat Bread), we haven't really discussed the perks of this ancient grain! ...continue reading
