“Better Than Paula Deen” Doughnut Burgers

Edit-no-text

Paula Deen's had a rough year. I don't  mean to beat her while she's down, especially because she does seem like an entertaining, humorous lady, but this recipe is leaps and bounds better than one of her most-discussed recipes! Have you heard of "The Lady's Brunch Burger"? She introduced the word to the fried egg-topped bacon burger served between two Krispy Kreme doughnuts (whoa!) in 2008 and shocked the country with the ...continue reading

Meatless Monday Dinner: Pizza Polenta Parfait

DSC_0004

Have you ever eaten polenta? Prior to this kitchen experiment, I'd only had it as a side while eating out. Polenta is just cornmeal cooked into a paste with water or stock, which can be eaten as-is or baked, fried or grilled. You can find it in grocery stores in tubes or make your own from boxed cornmeal. It's a versatile side since it can take on the flavor of whatever you prepare it with. It's surprisingly light, too! ...continue reading

Mini Cauliflower Pizzas

Happy birthday, Mom and Dad! My parents were born (one year and) four days apart, so I spent this weekend celebrating with them before Mom's day tomorrow and Dad's on Friday. We had an awesome time seeing the movie Rush (+1 to Ron Howard and co. for casting Chris Hemsworth), and playing golf. And as an added birthday bonus, I developed a new "cupcake" recipe! Pizza Quinoa Pasta Salad

Q2

This next Pizza Month recipe starts in a similar way to my Superfood Pizza, but the end result is a completely different—and completely delicious—treat. Rather than a crust, today's "pizza" gets a healthy dose of whole grains from quinoa. While I've cooked with this a couple times here on Healthful Bites before (see my Southwestern Stuffed Peppers and Honey Wheat Bread), we haven't really discussed the perks of this ancient grain! ...continue reading

200-Calorie Vegetarian Taco Salad

DSC_0020

1,390. That's the number of calories in a fully loaded chicken taco salad from a popular Mexican chain. It's also roughly equival to the amount of calories a 125-pound person would burn running at a 10-minute mile pace for 15 miles. Now I'm not saying that you need to think about exercising off every calorie you eat, but I could think of a lot more fun ways to eat nearly 1,400 calories! (It is ice cream season...) The main ...continue reading

Four Tailgating Recipes for “Vegetarian Awareness Month”

Tailgating usually means a few things to people: Meaty chili, beer, maybe some nachos or burgers. But if you surround your fellow fans with nutritious eats, they’ll be able to enjoy the food while focusing on the plays (or pregame fun) rather than worrying about their waistlines. And if you offer some hearty meat-free dishes, you’ll be sure that no guest gets stranded with just chips and salsa or a reheated freezer-burned ...continue reading
