    Giving Tofu a Try (Plus a Giveaway!)

    Confession: Until the very recent past, I had never cooked with tofu. I had prepared dishes with soy products of other forms—from soy crumbles in taco salads to turning soy beans into milk during an astronaut cuisine class in college (that’s a tale for another time!). But I had left the tofu prep to the restaurant pros until the kind folks at Nasoya approached me with an opportunity to try a few of their products. I took that message as the universe telling me that it was time!

    Having seen scrambled tofu on the menu at a few of my favorite brunch restaurants and curious to taste it, I decided that this would be dish number one. I did a few Google searches for a basic idea how to start and hit the kitchen on Sunday morning! Thanks to Gena at Choosing Raw, I knew to prepare on Saturday—stacking my tofu between two plates and weighing the top one down with a few water bottles to squeeze out the excess liquid. But I didn’t prepare quite so well in other ways…my refrigerator was nearly empty so I had to improvise in terms of my mix-ins.

    Little did I know that plain tofu is really a blank slate. Unlike beef, chicken or turkey, tofu really doesn’t taste like anything if you just cook it without significant spices or other ingredients. So when I tried just crumbling up the tofu in a pan with some random spices, the results were less than stellar. I could see the potential, but wished I had some bell peppers, onions, garlic and more to add to the party!

    In the future, I think I’ll stick with some tested and proven recipes like these:

    • This Tofu Scramble posted on SparkPeople is spiced up bell peppers, onion, garlic and curry powder.
    • Post Punk Kitchen adds cumin, thyme, tumeric and nutritional yeast.
    • And Eating Bird Food combines these two ideas for a sure-to-be flavor-packed mixture.

    And will also possibly try these other uses for tofu…

    March Magazine Bites (And a Giveaway Winner!)

    We have a giveaway winner! But we’ll save that until the end of the post because I love the suspense :)

    It’s mid-March (can you believe it?), and I’ve sifted through this month’s magazines to discover the most useful tips and bits of information. Now for four facts that especially piqued my interest:

    Don’t sweat it. Weight Watchers Magazine examined the why and how we perspire, and how individuals vary in their sweating style. Those that are exercising in cooler weather, have less insulation (AKA body fat), are already in pretty good shape and have eaten the proper fueling foods tend to sweat less than their opposites. Genetics also play a role. But none of this really matters in terms of your results—the amount you sweat doing a workout today may even be different than how much you sweat doing the same workout next week. All of this means that you can’t gauge your intensity on the drip factor. (Weight Watchers Magazine, March/April 2011)

    Paint strategically. Picking the right shades for various rooms in your house can set you up for a healthier and happier dwelling, according to a Sherwin-Williams expert interviewed in Shape. Apparently, an eggplant-like hue is perfect for the bedroom (romantic and peaceful), shades of blue work well in the bath (relaxing) and neutral colors are a perfect fit for your office space (making it easier to focus on your work). And the cherry on top, in my opinion? Painting several rooms can be a great workout! (Shape, March 2011)

    Banish belly fat. A larger waistline has been linked with lower bone-mineral density in women, says new research mentioned in SELF. Fat cells release certain hormones that may impact the strength of your skeleton. Avoiding broken hips in a roundabout way: Just one more reason to rack up a reasonable amount of cardio and eat a nutritious diet! (SELF, March 2011)

    Stretch smarter. As more and more exercise scientists delve into the world of stretching, the recommendations are changing quicker than many can keep up with! FITNESS summarized the latest findings this month, and here are the highlights:

    1. It’s best not to perform static stretches before your workout. Doing so likely makes your muscles have to work harder to do the same amount of work.
    2. Dynamic stretches let your body loosen up without altering performance, as static stretches can.
    3. Stretching doesn’t directly prevent injuries, but over time, limbering up can make your muscles a bit stronger. Pushing muscles into a stretch (although not to a point of pain) creates mini-tears in a muscle like strength training does—and the tissues grows back stronger. (FITNESS, March 2011)

    I stopped in at the Nutropolitan Museum of Art yesterday after receiving an invite to the event and seeing it discussed in several city papers earlier this week. How could I not, once I heard that everyone in attendance would take home a free jar of Peanut Butter & Company PB and better yet, that jar would be matched by one jar donated to the Food Bank for New York City?!

    While at the “museum,” I snapped a few photos of some of my favorite pieces of peanut butter art on display. A few more details about the artsy and funny meals above (and even a nutrition-minded, option or two, although many are better for looking at than tasting):

    • Pizzelle Perfect: Pizzelle waffle cookies layered with peanut butter and topped with berries
    • Nuts for the Beach: White bread with peanut butter, tiny crabs, seaweed, brown sugar “sand” and starfruit starfish
    • Starry Sandwich: An artfully cut honey peanut butter on toasted brioche, topped with starfruit
    • Don’t Be Afraid: An inside-out PB&J of sorts—with the J outside. Arachibutyrophobia (spelled out in Alpha-Bits) means “a fear of peanut butter sticking to the roof of one’s mouth,” according to Dictionary.com.
    • Peanuptual Agreement: White bread, smooth peanut butter, vanilla buttercream icing and sprinkles
    • You Say Tomato: Red and green tomatoes sandwiched between peanut butter-coated sourdough
    • Sandwich Artist: A PB&J palette with strawberry jam, apricot preserves, mint jelly and smooth, chocolate and spicy peanut butter

    Here’s a fun peanut quiz full of tidbits I learned at the event and in the “literature” distributed. Answers will be listed at the end of the post…so don’t peek ahead! ;)

    1. How many peanut farmers were elected to the U.S. presidency?

    Birthday Giveaway Winners!

    Last Saturday, I posted a fun giveaway (with six winners!) to celebrate my birthday. We had many wonderful comments and entries on the blog and Twitter. Thanks to all who entered! After selecting the winners via Random.org, here are the results…

    It’s my 23rd birthday today! While this makes me feel quite old—there’s not really any “highlight” or milestone to celebrate during the twenty-third year—I have a feeling that this is going to be a great year. 

    One of the things that makes me feel great: giving presents! I adore shopping for the perfect gift and watching the recipient open and enjoy my finds. So to celebrate my birthday, I’m giving you gifts!

    Here’s the scoop:

    • One person will win the prize pack pictured above: some of the goodies I grabbed at the SELF Workout in the Park that I attended last weekend with my great friend Jenn. The winner will also get a few dance-inspired DVDs to try out!

    Today’s video is something quick, simple and new to Healthful Bites: an exercise product recommendation! Have you tried weighted gloves? They add wonderful intensity to kickboxing and help you achieve the perfect weight level during your strength workout. Here’s a link to the pair I have been enjoying since I received them as a Christmas gift.
