Top 13 Healthful Bites Posts of 2013

Happy almost 2014! I hope you all are enjoying wonderful, relaxing celebrations with family and friends. A couple days after my holiday party, I drove to my hometown to see my parents and sisters and to bake, eat, read, relax, join Mom for some workouts, watch movies (go see The Secret Life of Walter Mitty!) and unwrap all sorts of running-related gifts. My family knows me well!

I’ve also had fun clicking back through old blog posts to find the most popular posts of the year. In case you missed it…

1. Crispy Zucchini Fries
This crunchy French fry swap is the ideal side during the summer months!

2. Healthy Pizza Recipe Roundup
Find all seven of my nutrition-packed pizza month dishes rounded up in one place.

3. 200-Calorie Vegetarian Taco Salad
Try this lunch to trim 1,000+ calories from the usual restaurant version (while keeping all of the amazing taste). I made this one for my Mom while visiting her and she couldn’t believe the nutrition info was accurate!

4. 13 Ragnar Relay Dos and Don’ts
Learn what to do (and what not to do) during long distance relay races as I reflect on the good, bad and ugly parts of running 21.3 miles in 24 hours.

5. Chocolate Peanut Butter Pretzel Bites
Looking for a simple, no-bake dessert? Pin this! It was a hit at every Christmas party I brought it to this year. Bonus: You need just three ingredients!

6. Pizza Quinoa Pasta Salad
Use this whole grain-based recipe as a formula, then add all of your favorite pizza toppings. Don’t forget the oregano! Next time, I’m planning to toss in a 1/4 teaspoon fennel seed. Mmm!

7. Mizuno Wave Sayonara Review + Speed Workout
What’s a fartlek? I explain and give you the straight scoop about a new lightweight pair of sneaks.

8. Homemade Apple Butter
Use your slow-cooker to warm apples and spices, then just blend and smear/spread/serve!

9. Low-Calorie Burrito Bowl
I’m slightly obsessed with this affordable, meat-free Chipotle swap. One huge serving is just 170 calories thanks to the genius cauliflower rice trick!

10. Superfood Pizza
Gluten-free, vegan optional and 100% delicious. Butternut squash isn’t just a topping on this pie!

11. Pizza Pasta Stuffed Peppers
Rather than rice or meat, stuff bell peppers with spaghetti squash and other Italian-spiced vegetables. Sure, it sounds strange, but it’s like eating a slice in an edible bowl!

12. Mini Strawberry Cheesecakes
One mini cheesecake has as much protein as an egg and just 83 calories! During winter, I like to add pears and subtract the strawberries (or use frozen berries).

13. That One Time I Was Hit By a Car…
This day majorly altered the trajectory of my year, but I’ve bounced back and am ready to tackle 26.2—for real this time—in June.

And there you have it! This was certainly a memorable year. :) From the composition of your top 13, it looks like I need to get busy in the kitchen during 2014 to develop more fun and nutritious meals and snacks!

If you can narrow it down, what was your favorite memory from the past year? And what would you like to see here on Healthful Bites during the next 12 months?
